Spicy Chicken Curry: This is a fantastic recipe for family dinners. Done in just 45 minutes!
INGREDIENTS
Servings: 4
Skinless, boneless chicken breast halves
2, cut into bite-size pieces
Tomato paste
1 tbsp
Lemon
1/2, juiced
Cayenne pepper
1/2 tsp
Olive oil
3 tbsps
Onion, chopped
1, chopped
Garlic
2 cloves, minced
Curry powder
3 tbsps
Ground cinnamon
1 tsp
Paprika
1 tsp
Bay leaf
1
Plain yogurt
1 cup
Coconut milk
3/4 cup
Ginger root
1/2 tsp, grated
White sugar
1/2 tsp
Salt
to taste
DIRECTIONS
- In a skillet, heat olive oil over medium heat. Add onion and saute until browned. Add ground cinnamon, paprika, garlic, bay leaf, curry powder, ginger, sugar, and salt to taste. Stir for 2 minutes. Add chicken, plain yogurt, tomato paste, and coconut milk.
- Bring to a boil. Reduce heat and continue cooking for 20 minutes.
- Discard bay leaf. Add lemon juice and cayenne pepper. Stir. Cook for 5 minutes. Enjoy your Spicy Chicken Curry!
