INGREDIENTS
Servings: 6
Garbanzo beans 
1 (19 ounce) can, rinsed and drained
Onion
1, small, finely chopped
Garlic
2 cloves, minced
Chopped fresh cilantro
1 1/2 tablespoons
Dried parsley
1 tsp.
Ground cumin
2 tsp.
Ground turmeric
1/8 tsp.
Baking powder
 1/2 tsp.
Fine dry bread crumbs
1 cup
Salt
3/4 tsp.
Cracked black peppercorns
1/4 tsp.
Vegetable oil for frying
1 quart
DIRECTIONS
  1. Using a spoon or potato masher, mash the garbanzo beans in a large bowl. Mix in onion, cilantro, garlic, parsley, cumin, turmeric, baking powder, bread crumbs, salt and pepper. Use your hands to combine thoroughly. Shape the mixture into 1 1/2 inch balls; the yield is about 18 to 24. If the mixture does not hold together, pour in a little water.
  2. Heat the oil in a deep fryer to 375°F /190°C or a heavy deep skillet over medium-high heat. Carefully put the balls into the hot oil to avoid splashes, and fry until brown. After the first batch, you may need to adjust the heat. Turn falafels frequently so they so they brown evenly.
