This easy and delicious Easy Chicken à la King is just the thing for those who don't want to discard their leftover chicken!
INGREDIENTS
Servings: 4
Chicken meat
1 cup, diced
Frozen mixed vegetables
1 (10 oz.) package, thawed
Chicken broth
1 ½ cups
Cornstarch
2 tsp.
Evaporated milk
1 (5 oz.) can
Salt
to taste
Pepper
to taste
DIRECTIONS
- Put the first three ingredients (from chicken to chicken broth) in a medium-sized saucepan, heat it over a medium-low heat, stir well, and let it simmer for about 10 minutes.
- Beat the cornstarch into the milk into a small bowl and add this sauce to the chicken mixture.
- Reduce the heat to low and cook until thickened stirring constantly.
- Season the mixture to taste (but check before if the leftover chicken is already seasoned enough), serve while hot.
