Carrots, diced

Crushed tomatoes

Dry lentils

Water

Garlic, minced

Dried oregano

Bay leaf

Dried basil

Spinach, rinsed and sliced
1/2 cup
Vinegar
2 tbsps
Salt and ground black pepper
to taste
DIRECTIONS
- Heat olive oil over medium heat in a large pot. Add chopped onions, carrots, and celery. Stirring, cook until the onion turns tender. Add garlic, oregano, bay leaf, and basil. Continue cooking for 2 more minutes.
- Add lentils, water, and tomatoes. Bring the soup to a boil. After that, reduce heat and simmer for about 1 hour.
- Add spinach and continue cooking until it wilts. Add vinegar. Season with salt and black pepper. Serve.
