INGREDIENTS

Zucchini
½ cup, sliced
Red bell pepper
½ cup, sliced
Yellow bell pepper
½ cup, sliced
Yellow squash
½ cup, sliced
Red onion
½ cup, sliced
16 fresh button mushrooms, whole
16 cherry tomatoes, whole
Olive oil
½ cup
Soy sauce
½ cup
Lemon juice
½ cup
Garlic
½ clove, crushed
DIRECTIONS
- In a large bowl, mix together all the ingredients from zucchini to tomatoes.
- In a smaller bowl, whisk all the remaining ingredients.
- Pour the marinade over the veggie mix.
- Let sit in the fridge for half an hour.
- Meanwhile, preheat a grill to medium and brush the grate with oil.
- Drain the marinade and cook the veggies on the grill for about 12 minutes or until as tender as you like them.
