A light, refreshing, and healthy Mediterranean potato salad – the perfect side dish for summer parties!

Potatoes

Bell pepper, diced

Cucumber, sliced, quartered

Red onions
½ cup, sliced
Feta cheese
8 oz, crumbled
Lemon juice
1 lemon
Italian-style salad dressing
½ cup
Salt
to taste
Pepper
to taste
Pita breads, cut into wedges (for serving)

DIRECTIONS
- Boil potatoes till tender, yet firm (15 to 20 minutes). Drain, set aside to cool.
- Chop cooled potatoes.
- In a salad bowl, mix potatoes with bell pepper, cucumbers, onions, and crumbled feta.
- Whisk Italian dressing with lemon juice, season with salt and pepper, and pour over the salad. Toss gently to coat.
- Serve with wedged pita breads (optional).
