INGREDIENTS
Servings: 16
Potatoes
2 lb
1 bell pepper, diced
1 cucumber, sliced, quartered
Red onions
½ cup, sliced
Feta cheese
8 oz, crumbled
Juice of 1 lemon
Italian-style salad dressing
½ cup
Salt
to taste
Pepper
to taste
2 to 3 pita breads, cut into wedges (for serving)
DIRECTIONS
  1. Boil potatoes till tender, yet firm (15 to 20 minutes). Drain, set aside to cool.
  2. Chop cooled potatoes.
  3. In a salad bowl, mix potatoes with bell pepper, cucumbers, onions, and crumbled feta.
  4. Whisk Italian dressing with lemon juice, season with salt and pepper, and pour over the salad. Toss gently to coat.
  5. Serve with wedged pita breads (optional).
