INGREDIENTS
Servings: 4
Vegetable oil
2 tbsp.
2 onions, chopped
1 green bell pepper, seeded, chopped
1 red bell pepper, seeded, chopped
1 yellow bell pepper, seeded, chopped
Garlic
2 cloves, crushed
Quinoa
¾ cup, uncooked
Vegetable broth
4 cups
Tomato puree
1 tbsp.
3 tomatoes, peeled, seeded, chopped
Italian seasoning
to taste
DIRECTIONS
  1. Preheat oil in a large skillet over a medium-high heat, add onions and all peppers, and cook for 5 minutes, stirring.
  2. Add garlic and cook for another 2 minutes.
  3. Add the next three ingredients (from quinoa to tomato puree) and stir the mixture well.
  4. Bring the mixture to a boil, cover, reduce the heat, and simmer on low for 20 minutes and until quinoa grains become soft.
  5. Add the remaining ingredients, cook until well-heated, and serve.
