INGREDIENTS
Servings: 4
Water
2 cups
Chicken bouillon
2 cubes
Garlic, smashed
1 clove
Uncooked quinoa
1 cup
Large chicken breasts
2, cooked, cut into bite-size pieces
Red onion, diced
1
Green bell pepper, diced
1
Kalamata olives, chopped
 1/2 cup
Crumbled feta cheese
1/2 cup
Chopped fresh parsley
1/4 cup
Chopped fresh chives
1/4 cup
Salt
1/2 tsp.
Fresh lemon juice
2/3 cup
Balsamic vinegar
1 tbsp.
Olive oil
1/4 cup
DIRECTIONS
  1. Bring water, bouillon cubes, and a garlic clove to a boil in a saucepan. Add quinoa, lower heat to medium-low, cover, and simmer until quinoa absorbs all the water, for  15 to 20 minutes. Discard the garlic clove and spoon quinoa into a large bowl.
  2. Gently mix in chicken, onion, bell pepper, olives, feta cheese, parsley, chives, and salt into the quinoa. Drizzle with the lemon juice, balsamic vinegar, and olive oil and mix. Serve warm or cold.
