Salad: Mexican Cucumber Salad
INGREDIENTS
Servings: 6
cucumber, chopped
whole kernel corn, drained
stewed tomatoes, drained and sliced
green bell pepper, chopped
red bell pepper, chopped
red wine vinegar
crushed red pepper flakes
garlic, minced
cumin
dried cilantro
salt
ground black pepper
DIRECTIONS
- In a large bowl, toss together the cucumber, corn, tomatoes, green bell pepper, red bell pepper, and red wine vinegar. Season with crushed red pepper flakes, garlic, cumin, cilantro, salt, and black pepper. Cover, and chill at least 30 minutes before serving.
