INGREDIENTS
Servings: 8
Ground beef
1 ½ lbs.
Onion
1, finely chopped
Garlic powder
to taste
Salt
to taste
Pepper
to taste
Tomatoes
1 (14.5 oz.) can, diced
Taco seasoning mix
1 package
Hot water
¾ cup
Whole kernel corn
1 (11 oz.) can, drained
Corn muffin mix
1 (8.5 oz.) package
Cheddar cheese
1 cup, shredded (optional)
Sliced black olives
1 (2.25 oz.) can (optional)
DIRECTIONS
  1. Heat the oven to 400° F/200° C/Gas Mark 6.
  2. Using a cooking spray, spray a 9x13 baking dish.
  3. Heat a skillet over a medium heat and add beef and onion. Cook until the beef is evenly browned and the onion becomes tender.
  4. Discard the grease and sprinkle with garlic powder, salt, and pepper.
  5. Add tomatoes, stir well, and cook for 5 minutes.
  6. Add taco seasoning mix and water, bring the mixture to a boil, reduce the hat to low, and cook until thickens or for about 5 minutes more.
  7. Transfer the mix to the baking dish and top with kernel corn.
  8. Following the package directions, prepare the muffin mix. Spread the mix over the corn layer.
  9. Bake for 20 minutes or until the pie is golden and puffed. Garnish it with olives and cheese.
