This super treat for kids will delight adults, too, and become a yummy on-the-go snack!
INGREDIENTS

Graham cracker crumbs
1/3 cup
White sugar
1 tbsp.
Butter
1 tbsp., melted
Cream cheese
1 (8 oz.) package, softened
White sugar
¼ cup
Lemon juice
1 ½ tsp.
Lemon zest
½ tsp., grated
Vanilla extract
¼ tsp.
1 egg
DIRECTIONS
- Heat the oven to 325° F/165° C/ Gas Mark 3.
- Prepare a 6-cup muffin pan and lightly grease it.
- Combine all the ingredients for the crust in a medium-sized bowl and mash them with a fork until combined.
- Put a spoonful of the mixture in the bottom of each muffin cup and press it firmly.
- Bake for about 5 minutes, then let the crust cool. Don’t turn off the oven.
- Combine all the remaining ingredients (from cream cheese to egg) in a medium-sized bowl and mix well.
- Pour the mixture into the cups making sure each cup is ¾ full. Bake for 25 minutes and cool in pan before serving.
