These potatoes are flavored with turmeric and cumin. They work well as a side dish and as a pastry filling.
INGREDIENTS

Baking potatoes
10, peeled, large diced
Olive oil
3 tbsp., or more if necessary
Yellow onion
1, small chopped
Ground turmeric
1 tbsp.
Salt
1 tbsp., but you can adjust to taste
Ground black pepper
2 tsp.
Ground cumin
½ tsp.
DIRECTIONS
- Add potatoes to a large pot; cover with water. Place over medium-high heat and bring to a boil. Reduce heat to medium-low and let simmer until tender (about 20 minutes).
- Heat 1 tbsp. of olive oil in a skillet. Add onions, cook. Stirring, until slightly browned.
- Drain potato boiling water; mash the potatoes. Add cooked onions, mash some more until combined. Sprinkle with the spices and salt, add olive oil, and mix well. If you want your potatoes creamier, add more olive oil.
