Mulligatawny Soup Recipe: This wholesome soup is made with heavy cream, apples, chicken, and rice!
INGREDIENTS
Servings: 6
White rice
1/4 cup
Chicken breast half (skinless, boneless)
1, cut into cubes
Onion
1/2 cup, chopped
Celery
2 stalks, chopped
Carrot
1, diced
Butter
1/4 cup
Dried thyme
1 pinch
Heavy cream, heated
1/2 cup, heated
All-purpose flour
1 1/2 tbsps
Curry powder
1 1/2 tsps
Chicken broth
4 cups
Apple
1/2, cored, chopped
Salt and black pepper
to taste
DIRECTIONS
- In a large pot, saute diced carrot, chopped onions, celery, and butter. Add all-purpose flour and curry powder. Cook for 5 minutes. Add chicken broth and stir. Bring the soup to a boil. Simmer for 30 minutes.
- Add chopped apple, salt, pepper, rice, chicken cubes, and dried thyme. Simmer for 20 min (until the rice is cooked). Add heated heavy cream before serving. Enjoy your Creamy Mulligatawny Soup!
