This effortless cookie recipe yields a big batch of moist, super tasty cookies. And they are vegan, too!

INGREDIENTS
Servings: 24
Maple syrup
2/3 cup
Vegetable oil
¼ cup
Unsweetened cocoa powder
5 tbsp.
Ground cinnamon
1 tsp.
Peanut butter
½ cup
Rolled oats
1 cup
Vanilla extract
1 tsp.
DIRECTIONS
  1. Add maple syrup, vegetable oil, cocoa powder and cinnamon to a saucepan. Place over medium heat and bring to a boil. Stir non-stop for 3 minutes while still on the stove. Remove from heat.
  2. Stir in rolled oats, peanut butter, and vanilla extract, mix till well combined.
  3. Line a baking sheet with parchment paper.
  4. Scoop heaping spoonfuls and drop onto the parchment. Repeat until you have no more batter.
  5. Refrigerate for 30 minutes or until set.
