INGREDIENTS

Vegetable oil
3 cups, for frying
Okra
1 lb., finely chopped
Onion
1 cup, finely chopped
Salt
1 tsp.
Pepper
¼ tsp.
Water
½ cup
1 egg
All-purpose flour
½ cup
Baking powder
1 tsp.
Cornmeal
½ cup
DIRECTIONS
  1. Prepare a large skillet, add 1 inch of oil to it, and heat the skillet to 375° F/190° C.
  2. Mix together the next six ingredients (from okra to egg) in a large bowl.
  3. Combine the remaining ingredients (from flour to cornmeal) and stir this mixture into the okra mixture.
  4. Spoon the okra batter in the skillet and fry for about 2 minutes per side, or until golden.
  5. Remove patties from the skillet and drain on paper towels.
