Crispy and tender at the same time, these salmon patties always disappear fast!
INGREDIENTS

Salmon
1 (14.75 oz) can
Butter
2 tbsps
Fresh parsley
1/4 cup, chopped
Dry mustard
1 tsp
Shortening
3 tbsps
Onion
1, chopped
Cracker crumbs
2/3 cup
Eggs
2, beaten
DIRECTIONS
- Reserving about 3/4 cup of the salmon liquid, drain the salmon and then flake it.
- Melt butter in a skillet. Add onion. Cook until tender.
- Mix onion with the salmon liquid, fresh parsley, mustard, 1/3 of the crumbs, eggs, and fish in a bowl. Shape into 6 patties. Coat the patties in crumbs.
- Melt the shortening in a skillet. Add salmon patties. Cook until browned on both sides. Enjoy!
