INGREDIENTS

Pasta
1 (12 oz.) package
Olive oil
2 tbsp., divided
Bacon
6 slices, chopped
Garlic
2 tbsp., minced
Tomatoes
1 (14.5 oz.) can, diced
Fresh spinach
1 bunch, rinsed, torn into bite-size pieces
DIRECTIONS
- Add water to a large pot and bring it to a boil. Add pasta and cook for about 8 to 10 minutes or until tender.
- Meanwhile, add 1 tbsp. olive oil to a skillet and heat over medium heat. Add bacon and cook until brown and crisp.
- Add garlic and cook for another minute. Add tomatoes and cook until well heated.
- Put spinach on a colander and drain the hot pasta over it until it’s wilted.
- Transfer to a large bowl, toss with 1 tbsp. oil, and add bacon and tomato mixture.
