Quick Pasta with Spinach and Bacon

INGREDIENTS
Servings: 4
Pasta
1 (12 oz.) package
Olive oil
2 tbsp., divided
Bacon
6 slices, chopped
Garlic
2 tbsp., minced
Tomatoes
1 (14.5 oz.) can, diced
Fresh spinach
1 bunch, rinsed, torn into bite-size pieces
DIRECTIONS
  1. Add water to a large pot and bring it to a boil. Add pasta and cook for about 8 to 10 minutes or until tender.
  2. Meanwhile, add 1 tbsp. olive oil to a skillet and heat over medium heat. Add bacon and cook until brown and crisp.
  3. Add garlic and cook for another minute. Add tomatoes and cook until well heated.
  4. Put spinach on a colander and drain the hot pasta over it until it’s wilted.
  5. Transfer to a large bowl, toss with 1 tbsp. oil, and add bacon and tomato mixture.
