INGREDIENTS
Servings: 6
Peppered bacon, diced
1/2 pound
Chopped green onion
2 tbsp.
Minced garlic
2 tsp.
Diced tomatoes
1 (14.5 ounce) can
Dried basil
1 tsp.
Salt
1 tsp.
Ground black pepper to taste
Linguine pasta
1 (16 ounce) package
Grated Parmesan cheese
3 tbsp.
DIRECTIONS
  1. Place bacon in the cold skillet. Set the heat to medium-high heat and fry until browned and crisp. Drain, reserving drippings, and set aside.
  2. Fry, stirring constantly, green onion and garlic in bacon drippings over medium heat for one minute. Add tomatoes, basil, salt and ground black pepper; reduce the heat and let simmer for 5 minutes.
  3. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente (for about 8 to 10 minutes); drain.
  4. In a serving dish, mix together hot pasta with sauce and bacon. Sprinkle with Parmesan cheese.
