INGREDIENTS
Servings: 6
Olive oil
3 tbsps
3 red bell peppers, cut in half, seeds removed
Cherry tomatoes
1 pint, halved
Fresh basil
½ cup, chopped
Garlic
8 cloves, sliced
Salt
1 tsp
Fresh ground black pepper
½ tsp
Herb vinegar
1 tbsp
DIRECTIONS
  • Turn the oven to preheat to 400°F/200°C/Gas Mark 6. Brush a 9x13 inch baking dish with olive oil.
  • Toss cherry tomato halves with basil, garlic, salt, and pepper in a large bowl.
  • Arrange bell pepper halves in the baking dish, stuff with the tomato filling.
  • Cover with aluminum foil, pop in the oven, bake for 15 minutes.
  • Remove foil, bake for 15 minutes more; remove from oven.
  • Sprinkle with herb vinegar before serving.
