These chicken tenderloin skewers are just right for mid-summer BBQ party!
INGREDIENTS

Pineapple juice - 1 cup
Packed brown sugar
½ cup
Light soy sauce
1/3 cup
Chicken breast tenderloins
2 lb.
Wooden skewers
DIRECTIONS
- Add pineapple juice, soy sauce, and brown sugar to a small saucepan; heat over medium heat. Heat through thoroughly but don’t let boil. Remove from heat when the first bubble appears.
- Add chicken to a medium bowl, top with the marinade. Let cool to room temperature, then chill for 30 minutes up to an hour.
- Meanwhile, soak the skewers in a shallow bowl with warm water.
- Preheat the grill to medium. Lightly brush with oil.
- Thread tenders onto skewers lengthwise. Place on the grill and let cook for 5 minutes on each side. Do not leave the skewers unattended, as the chicken cooks very quickly!
