French Toast with Pumpkin Puree

INGREDIENTS
Servings: 4
Large eggs 
3
Half-and-half cream
 1/2 cup
Canned pumpkin puree
 1/4 cup
Ground cinnamon
 1 tsp
Vanilla extract
 1 tsp
Pumpkin pie spice
 1/4 tsp
Walnuts
 1/4 cup, finely chopped
Day-old bread
 8 slices
DIRECTIONS
  1. Lightly spray a pan with oil and place over medium heat.
  2. In a medium bowl beat eggs, half and half cream, pumpkin puree, cinnamon, vanilla extract, pumpkin pie spice, and chopped walnuts together. Put slices of bread into the mixture, one at a time, let soak in some of the pumpkin mixture for 5-10 seconds. Place on the preheated pan. Brown on both sides, about 3 minutes.
  3. Garnish with berries before serving, if desired.
