INGREDIENTS
Servings: 4
Water 
2 cups
Quinoa 
1 cup
Salt 
1 pinch
Cucumber, diced 
1
Green onions, diced 
2 bunches
Carrots, grated 
2
Fresh parsley, chopped 
1 cup
Olive oil 
1/4 cup
Sea salt 
1/2 tsp
Lemon juice 
1/4 cup
Tomatoes, diced

DIRECTIONS
  1. Bring water to a boil in a medium saucepan. Add quinoa. Season with salt. Reduce heat. Simmer for about 15 minutes, covered. Let it cool to room temperature. Fluff the mixture with a fork.
  2. Meanwhile, mix olive oil, tomatoes, cucumber, sea salt, lemon juice, onions, carrots, and parsley in a large bowl. Add quinoa and stir. Serve and enjoy your Quinoa Tabbouleh!
