Quinoa

Cucumber, diced

Carrots, grated

Fresh parsley, chopped

Olive oil

Sea salt

Lemon juice

DIRECTIONS
- Bring water to a boil in a medium saucepan. Add quinoa. Season with salt. Reduce heat. Simmer for about 15 minutes, covered. Let it cool to room temperature. Fluff the mixture with a fork.
