Easy tomato basil soup: Heavy cream and fresh basil make this Tomato Soup especially rich, flavorful, and creamy!
INGREDIENTS

Tomatoes
4, peeled, seeded, and diced
Tomato juice
4 cups
Fresh basil
14 leaves
Heavy whipping cream
1 cup
Butter
1/2 cup
Salt
to taste
Pepper
to taste
DIRECTIONS
- Simmer diced tomatoes and tomato juice in a stock pot over medium heat for 30 minutes. Transfer the tomato mixture to a bowl. Add basil leaves. Puree the tomato mixture and return it to the stock pot.
- Cook over medium heat. Stir in the cream and butter. Season the soup with salt and pepper to taste. Stir until the butter is melted. Do not bring to a boil! Serve and enjoy your Tomato Soup with Basil!
