INGREDIENTS
Servings: 20
Fresh tomatillos
1 lb., husks removed
Garlic
1 head, separated and peeled
3 fresh jalapeno peppers
Cilantro
1 bunch, fresh
Water
½ cup
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. Preheat the oven’s broiler. Put the whole garlic cloves, tomatillos, and jalapenos on a baking sheet. Place under the broiler and cook for several minutes. Remove garlic cloves when they are toasted. Roast jalapenos and tomatillos, stirring occasionally. When they are evenly charred, remove from the oven and set aside to cool. Don’t discard the charred parts.
  2. Blend together peppers, tomatillos, garlic, and cilantro. If it is necessary, add a little water. Season with salt and pepper. Put in the fridge until serving.
