Divine Scallops in Wine Sauce

INGREDIENTS
Servings: 24
White wine
¼ cup
White wine vinegar
¼ cup
Shallots
1 tbsp.
Heavy cream
½ cup
Butter
¾ cup
24 sea scallops
Olive oil
1 tbsp.
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. Combine white wine, white wine vinegar, and shallots in a medium saucepan and cook until the liquid has almost evaporated (leave about 1 tbsp. of it).
  2. Add heavy cream, stir well, and let boil down until the volumes reduces by half.
  3. Add butter, stirring, 1 tbsp. at a time. Make sure you allow each tablespoon of butter melt before you add another one. Keep the mixture warm while you’re preparing scallops.
  4. Preheat oven on broiler setting.
  5. Drizzle olive oil on scallops and sprinkle them with salt and pepper.
  6. Place scallops under the broiler and cook for about 2 minutes per side until they turn opaque and a bit brown around the edges.
  7. Put a bit of sauce on each plate and top with four scallops.
