INGREDIENTS
Servings: 4
Garlic
2 cloves, minced
Fresh ginger root
1 tbsp., minced
Soy sauce
¼ cup
Rice vinegar
3 tbsp.
Peanut oil
¼ cup
Sesame oil
3 tbsp.
Hot pepper sauce
1 dash
½ green bell pepper, cut into sticks
½ red bell pepper, cut into sticks
½ yellow bell pepper, cut into sticks
4 green onions, minced
Snap peas, diagonally sliced
2 cups
Sesame seeds
2 tbsp., toasted
Fresh udon noodles
1 (7 oz.) package
DIRECTIONS
  1. Place the first seven ingredients (from garlic to hot pepper sauce) in a jar and close it with a tight fitting lid. Share the mixture well to blend and set aside.
  2. Prepare a large pot of water and bring it to a boil. Place udon noodles in the pot and cook for 3 minutes or until tender. Drain the noodles and place on a serving bowl.
  3. Take a microwave-safe bowl and add all the peppers, green onions, and peas. Heat in your microwave until warm but crisp.
  4. Add the pepper mixture to the noodles and cover with the dressing.
  5. Toss to coat and sprinkle with sesame seeds.
