Garlic-rosemary potatoes is a good veggie idea for your BBQ!
INGREDIENTS
Servings: 8
Red potatoes
2 lbs., cut into quarters
Water
½ cup
Light mayonnaise
½ cup
White wine
¼ cup, dry
Rosemary
2 tsp., crushed, dried
Garlic powder
1 tsp.
Wooden skewers, soaked in water for 30 min
DIRECTIONS
- Prepare a microwave-safe bowl and add potatoes and water to it. Cook in a microwave for 15 minutes or until tender stirring occasionally. Drain and let potatoes steam to dry.
- Combine the next four ingredients (from mayonnaise to garlic powder) in a large bowl, add potatoes, and toss to coat.
- Leave the mixture in the fridge for 1 hour to marinate.
- Heat an outdoor grill to a high heat and lightly oil the grate.
- Discard the marinade and skewer potatoes.
- Cover and grill for 6 to 8 minutes brushing with the marinade and turning once.
