Slow Cooker Chicken Taco Soup

This crockpot chicken recipe can be a soup or a chili. Either way, it is delicious and adaptable to tastes!

1 onion, chopped
Chili beans -1 can (16 oz.)
Black beans
1 can (15 oz.)
Whole kernel corn
1 can (15 oz.), drained
Tomato sauce
1 can (8oz.)
12 fl. oz.
Diced tomatoes with green chilies
2 cans (10 oz. total), with liquid
Taco seasoning
1 envelope
3 chicken breasts, skinless, deboned
Cheddar cheese
to taste, for serving
Sour cream
to taste, or serving
Crushed tortilla chips
to taste, for serving
  1. Add all the ingredients from onions to diced tomatoes to the slow cooker pot. Mix in taco seasoning. Press chicken breasts into the mixture until just covered. Cook on LOW for 5 hours.
  2. After 5 hours, remove chicken breasts from the slow cooker pot and set aside to get cool to touch. Shred and return into the pot. Stir to combine, cover with a lid, and cook for 2 more hours.
  3. Serve in bowls topped with sour cream, Cheddar, and tortilla chips, if desired.
