This delicious meatless chili is packed with veggies and beans that give it such a tantalizing flavor! Bonus: you will prepare the dish in 15 minutes!
INGREDIENTS

Olive oil
1 tbsp.
½ onion, medium-sized, chopped
2 bay leaves
Ground cumin
1 tsp.
Dried oregano
2 tbsp.
Salt
1 tbsp.
Celery
2 stalks, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
Garlic
3 cloves, chopped
Chopped green chili peppers
2 (4 oz.) cans
Vegetarian burger crumbles
2 (12 oz.) packages
Whole peeled tomatoes
3 (28 oz.) cans, crushed
Chili powder
¼ cup
Ground black pepper
1 tbsp.
Kidney beans
1 (15 oz.) can, drained
Garbanzo beans
1 (15 oz.) can, drained
Black beans
1 (15 oz.) can
Whole kernel corn
1 (15 oz.) can
DIRECTIONS
- Pour olive oil in a large pot and heat it over a medium heat.
- Stir in the next five ingredients (from onion to salt) and cook stirring until the onion is tender.
- Add the next five ingredients (from celery to green chili peppers) and when the veggies are well heated, add vegetarian burger crumbles.
- Reduce the heat to low, cover the pot, and let it simmer for 5 min.
- Add tomatoes, season the mixture with chili powder and black pepper, and add all the three types of beans.
- Bring the chili to a boil, reduce the heat to low, and simmer it for 45 min.
- Stir in the whole kernel corn and cook for 5 more min. Serve while hot.
