This Three Bean Soup is not only easy, it is also very pretty and delicious! Serve topped with chopped spring onions and grated Cheddar.
INGREDIENTS

Vegetable oil

Onion, small chopped

Bell peppers, different colors, seeded, chopped

Chicken broth
1 (14.5-oz) can
Canned tomatoes with green chili peppers
1 10-oz can
Black beans
2 15-oz cans, drained
Pinto beans
1 15-oz can, drained
Kidney beans
2 15-oz cans, drained
DIRECTIONS
- Add vegetable oil to a large saucepan. Heat over medium heat.
- Add onions and bell peppers and cook until softened.
- Add chicken broth and the contents of all cans. Mix well and let heat through before serving.
Recipe Modification: Heat-lovers can, together with beans, add a minced clove of garlic, 1 tsp. cumin, 2 tsp. chili powder and 1/16 tsp red pepper for an extra kick!
