Vanilla extract
1/2 tsp

1/4 cup, room temperature

DIRECTIONS
  1. Whisk together egg yolks and white sugar in a saucepan. Add milk. Over medium heat, bring to a boil, stirring often. Let it boil for 1 min. Remove from heat. Let it cool slightly. Chill in the refrigerator for 1 hour, covered.
  2. Beat heavy cream and vanilla in a bowl (until stiff peaks appear).
  3. Whisk cheese into the egg mixture.
  4. Mix room-temperature coffee and 2 tbsps rum in a bowl. Split cookies in half lengthwise. Drizzle the cookies with coffee and rum.
  5. Place 1/2 of the cookies in the bottom of a 7x11-inch dish. Spread 1/2 of the cheese and egg mixture over the cookies. Over that, spread 1/2 of the heavy cream and vanilla mixture. Repeat layers. Sprinkle the top with cocoa powder. Refrigerate for 4 hours, covered. Enjoy your Tiramisu!
