Vegetarian Burrito Casserole

INGREDIENTS
Servings: 8
White rice
¾ cup
Water
1 ½ cups
Frozen soy burger-style crumbles
12 oz
Canned whole tomatoes
1 can (28 oz), drained, ¼ cup juice set aside
Chili powder
2 ½ tsp.
Cumin
1 tsp.
Taco seasoning 
1 package
10-in tortillas

Vegetarian refried beans
1 can (14.25 oz), divided
Fresh jalapenos, seeds removed, sliced, divided

Salsa
1 ½ cups, divided
Cheddar cheese
2 ½ cups, divided
DIRECTIONS
  1. Bring a saucepan of water to boil. Add rice, reduce heat to low, stir, and let simmer under the lid for 20 minutes.
  2. Meanwhile, turn the oven to preheat to 375°F/190°C/Gas Mark 5.
  3. Add soy crumbles, all the spices, tomatoes and ¼ cup juice into a skillet. Cook stirring on medium-high for 10 minutes.
  4. Line a lightly greased baking dish with one tortilla. Add ½ refried beans, ½ jalapenos, ½ cooked rice, ½ salsa, ½ cooked soy crumbles, and 1 cup Cheddar. Cover with the other tortilla and layer the remaining ingredients on top,  1 ½ cups Cheddar being the final layer.
  5. Bake for 15 minutes or until the cheese is bubbly. Serve hot.
