Vegetarian: Watermelon Gazpacho
INGREDIENTS
Servings: 6
Watermelon
2 cups, 1/4-inch-diced
Orange juice
2 cups
Extra-virgin olive oil
2 tbsp
Seedless cucumber
1, cut into 1/4-inch dice
Small yellow bell pepper
1, seeded and cut into 1/4-inch dice
Small onion
1, cut into 1/4-inch dice
Garlic
2 cloves, minced
Small jalapeno pepper
1, seeded and minced
Fresh lime juice
3 tbsp
Fresh parsley, basil or cilantro
2 tbsp, chopped
Salt
to taste
Ground black pepper
to taste
DIRECTIONS
- Process 1/2 cup of watermelon, along with the orange juice and oil, in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)
