INGREDIENTS

Baking powder

Salt 
1 tsp
Walnuts 
1/2 cup, chopped
Eggs 
All-purpose flour 
3 cups
Ground cinnamon 
3 tsps
Vegetable oil 
1 cup
White sugar 
2 cups
Zucchini 
2 cups, grated
Vanilla extract 
2 tsps
Baking soda 
1 tsp
DIRECTIONS
  1. Preheat oven to 325° F ( 165° C). Prepare two 8x4-inch loaf pans by greasing and flouring them.
  2. Beat eggs until light in a bowl. Mix in vegetable oil and white sugar. Add zucchini and vanilla extract. Stir well.
  3. In a bowl, combine all-purpose flour, baking powder, ground cinnamon, soda, salt, and chopped walnuts. Stir the flour mixture into the egg mixture. Pour the mixture into the loaf pans.
  4. Bake in the preheated for 60 minutes.
