All-purpose flour

Ground cinnamon

Vegetable oil
1 cup
White sugar
2 cups
Zucchini
2 cups, grated
Vanilla extract
2 tsps
Baking soda
1 tsp
DIRECTIONS
- Preheat oven to 325° F ( 165° C). Prepare two 8x4-inch loaf pans by greasing and flouring them.
- Beat eggs until light in a bowl. Mix in vegetable oil and white sugar. Add zucchini and vanilla extract. Stir well.
- In a bowl, combine all-purpose flour, baking powder, ground cinnamon, soda, salt, and chopped walnuts. Stir the flour mixture into the egg mixture. Pour the mixture into the loaf pans.
- Bake in the preheated for 60 minutes.
