Zucchini Pancakes

INGREDIENTS
Servings: 4
Eggs

Zucchini
2 cups, grated
All-purpose flour
¾ cup
White sugar
½ tsp.
Salt
½ tsp.
Olive oil
3 tbsp.
Baking powder
4 tsp.
Butter
¼ cup, melted
DIRECTIONS
  1. Heat the oven to 425° to 450° F/220 to 225° C.
  2. Beat eggs in a large mixing bowl, add zucchini and mix well using a fork.
  3. Add the next four ingredients (from flour to oil) and keep stirring until well-blended.
  4. Add baking powder and mix well with a large spoon. The consistency of the batter should remind that of heavy whipping cream.
  5. Spoon about 2 tbsp. batter 9for 1 pancake) on the hot grill and keep cooking for about 2 minutes or until there are no more bubbles. Turn and cook for 2 more minutes.
  6. Rub the pancakes with butter and serve.
