INGREDIENTS
Servings: 5
Dates
10, pit removed, chopped
Coconut water
1 cup + more, to adjust the thickness, chilled
Bananas
2, ripe, chilled
Avocado
½ , pit removed, scooped
Unsweetened almond butter
¼ cup
Cocoa powder
¼ cup
Sliced banana (it and all the next ingredients are optional)
to taste
Sliced strawberries
to taste
Blueberries
to taste
Coconut flakes
to taste
Fresh mint
to taste
DIRECTIONS
  1. Add dates and ½ cup coconut water into the blender cup. Blend until smooth. If needed, add more coconut water.
  2. Add bananas, avocado, almond butter, and cocoa powder. Top with ½ cup coconut water and blend until smooth. If the pudding seems too thick, add more coconut water.
  3. Fill serving glasses with ½ cup pudding per serving.
  4. If desired, top with banana and strawberry slices, blueberries, and sprinkle with coconut flakes. Finish with a sprig of mint and serve.
