Gluten-free cocoa avocado pudding is nutritious and delicious!
INGREDIENTS

Dates
10, pit removed, chopped
Coconut water
1 cup + more, to adjust the thickness, chilled
Bananas
2, ripe, chilled
Avocado
½ , pit removed, scooped
Unsweetened almond butter
¼ cup
Cocoa powder
¼ cup
Sliced banana (it and all the next ingredients are optional)
to taste
Sliced strawberries
to taste
Blueberries
to taste
Coconut flakes
to taste
Fresh mint
to taste
DIRECTIONS
- Add dates and ½ cup coconut water into the blender cup. Blend until smooth. If needed, add more coconut water.
- Add bananas, avocado, almond butter, and cocoa powder. Top with ½ cup coconut water and blend until smooth. If the pudding seems too thick, add more coconut water.
- Fill serving glasses with ½ cup pudding per serving.
- If desired, top with banana and strawberry slices, blueberries, and sprinkle with coconut flakes. Finish with a sprig of mint and serve.
