INGREDIENTS
Servings: 4
Butter
¼ cup, melted
Dijon mustard
3 tbsps
Honey
1 ½ tbsps
Dry breadcrumbs
¼ cup
Pecans
¼ cup, finely chopped
Fresh parsley
4 tsps
Salmon
4 fillets (4 oz total)
Salt
to taste
Black pepper
to taste
Lemon, cut into wedges, for serving

DIRECTIONS
  1. Turn on the oven to start preheating to 400°F/200°C/Gas Mark 6.
  2. Stir butter with honey and mustard.
  3. Mix pecans with breadcrumbs and chopped parsley in another bowl.
  4. Coat the salmon in the mustard mixture (don’t rub in, just brush lightly) and sprinkle with the breadcrumb mixture on one side.
  5. Bake for up to 15 minutes – ready salmon would be easily flaked with a fork. Season to taste with salt and fresh pepper. Serve garnished with a lemon wedge.
