INGREDIENTS
Servings: 2
Mackerel
10.5 oz (300 g )
Jasmine rice
3.5 oz (100g)
Spring onions, sliced

Red pepper, the seeds pulled out, diced 
1
Soy sauce
1 tbsp
Juice 
1 lime
Fresh ginger
1 small piece, grated
Crushed garlic clove 
1
Honey
2 tbsps
DIRECTIONS
  1. Prepare the marinade mixing all the marinade ingredients together.
  2. Put the mackerel into a large bowl, and spread some marinade over the mackerel.
  3. Stretch plastic wrap over the bowl, put it in the fridge, and keep it there for 30 minutes.
  4. Preheat the grill; line a baking pan with aluminum foil, and put the mackerel into the baking pan skin-side up.
  5. Grill for 5 minutes, then pour the rest of the marinade over the mackerel, and grill for 5 more minutes.
  6. Prepare the rice following the instructions on the pack, then drain it, add the spring onions and pepper, and stir the mixture.
  7. Serve the rice with the mackerel.
