Try this zesty ginger and lime Mackerel recipe for a taste explosion!
INGREDIENTS

Mackerel
10.5 oz (300 g )
Jasmine rice
3.5 oz (100g)
Spring onions, sliced

Red pepper, the seeds pulled out, diced

Soy sauce
1 tbsp
Juice
1 lime
Fresh ginger
1 small piece, grated
Crushed garlic clove
1
Honey
2 tbsps
DIRECTIONS
- Prepare the marinade mixing all the marinade ingredients together.
- Put the mackerel into a large bowl, and spread some marinade over the mackerel.
- Stretch plastic wrap over the bowl, put it in the fridge, and keep it there for 30 minutes.
- Preheat the grill; line a baking pan with aluminum foil, and put the mackerel into the baking pan skin-side up.
- Grill for 5 minutes, then pour the rest of the marinade over the mackerel, and grill for 5 more minutes.
- Prepare the rice following the instructions on the pack, then drain it, add the spring onions and pepper, and stir the mixture.
- Serve the rice with the mackerel.
