INGREDIENTS
Servings: 4
Ground beef
1 lb.
Cheddar cheese
8 oz. shredded
Barbecue sauce
¾ 18-oz. bottle
Stewed tomatoes
1 14.5-oz. can, drained
Corn kernels
1 15-oz. can, drained
Tortilla chips
1 14.5-oz. package
DIRECTIONS
  1. In a large skillet, brown beef over medium-high heat. Drain the fat, but keep the beef in the skillet.
  2. Add cheese, corn, tomatoes and BBQ sauce to the beef, mix to combine well. Cook until well heated through.
  3. Spread tortilla chips on 4 plates. Use a spoon to divide the beef mixture between the plates. Serve hot.
