INGREDIENTS
Servings: 4
Quick-cooking oats
1 cup
Whole wheat flour
2 1/4 cups
All-purpose flour
1/4 cup
Dark brown sugar
1/2 cup
Baking soda
2 1/4 tsp
Baking powder
1 tsp
Salt
2 tsp
Extra stout beer
1 (11-oz) bottle (room temperature)
Buttermilk
1 cup, shaken
Unsalted butter
5 tbsp, melted, plus for the pan
Vanilla extract
1 tsp
DIRECTIONS
  1. Preheat the oven to 450° F (220° C/Gas mark 8). Brush a loaf pan with butter.
  2. Combine oats, whole wheat flour, all-purpose flour, baking powder, salt, brown sugar, and baking soda.
  3. Whisk together beer, butter (5 tbsp), and vanilla extract in another bowl. Make a well in the dry mixture. Pour the beer mixture into it. Stir the mixture from the middle to the outside until mixed.
  4. Pour the mixture into the prepared pan. Sprinkle with oats. Place in the oven.
  5. Turn the oven temperature to 400° F (200° C/Gas mark 6). Bake for 45 minutes. Use a toothpick to check for doneness: insert it in the center and check if it comes out clean. Turn onto a baking rack. Let the Easy Beer Bread cool completely.
