Bell Pepper Eggs: This super easy breakfast is sure to cheer you up on a gloomy morning!
INGREDIENTS

Bell pepper
1 (or 4 in different colors)
Vegetable oil
1 tbsp
Large eggs
4
Parsley
for garnish, chopped
Salt
to taste
Pepper
to taste
DIRECTIONS
- Slice pepper to make four 1/2-inch-thick rings. Remove seeds and flesh.
- In a skillet, heat oil over medium heat. Cook pepper rings for about 2 minutes. Turn over. Crack 1 egg into each bell ring. Cover the skillet. Cook for a few minutes, until eggs reach the desired doneness.
- Season with salt and pepper. Garnish with parsley. Enjoy your Bell Pepper Egg!
