Whatever you choose your blueberry chia pudding to be - a dessert, a breakfast, or a snack - it will be a healthy one!
INGREDIENTS
Servings: 4
Coconut milk
2 cups
Chia seeds
1/2 cup
Honey
to taste (optional)
Fresh blueberries
1 cup + 2 cups for puree (optional)
Coconut flakes
12 tbsp. (optional)
DIRECTIONS
- Add coconut milk to a container or bowl. Stir in chia seeds. If you want your pudding sweeter, add a little honey. Cover with a lid or plastic wrap and refrigerate overnight or until thickened.
- For the blueberry puree: add 2 cups blueberries to a saucepan. Heat over medium-high heat until the berries start to burst. Remove from heat. Use a potato masher or an immersion blender to puree the berries. Taste and add honey, if desired. Let cool.
- Spoon a little pudding into bowls, add blueberry puree, top with more pudding. Garnish with the remaining whole blueberries and coconut flakes, if using.
