- Zest – 2 blood oranges
- Zest – ½ lemon
- Zest – ½ orange
- Orange juice – ½ orange
- Lemon juice – ½ lemon
- Blood orange juice – 2 blood oranges
- Caster sugar – 8 oz
- Unsalted butter – 4 oz
- 4 egg yolks
- Place all the ingredients in a deep heatproof bowl. Whisk them thoroughly but gently.
- Place a pot with water over high heat. When the water starts to boil lower the flame. Put the bowl with the ingredients for blood orange curd over the pot. Continue to whisk the ingredients until thickened. Don’t overcook, otherwise the mixture may curdle!
- Cool before serving. Serve with puddings.
