Healthy Pumpkin Waffles
INGREDIENTS

(cooking time: 50 min; 4 servings)

  • Whole wheat flour – 1 cup
  • Wheat germ – ¼ cup
  • White sugar – 1/3 cup
  • Ground cinnamon – 1 tsp
  • Pumpkin spice – 1 tsp
  • Ground nutmeg – ½ tsp
  • Salt – ½ tsp
  • Baking powder – 1 tbsp
  • Milk – ¾ cup
  • Pumpkin puree – ½ cup
  • Melted butter – 2 tbsps
  • Olive oil – 2 tbsps
  • Unsweetened apple sauce – ½ cup
  • 1 egg + 1 egg white
  • Pecans – ½ cup, chopped
INSTRUCTIONS
  • Follow the manufacturer’s instructions to preheat the waffle iron. In a large bowl, mix flour with sugar, spices, salt, wheat germ, and baking powder; set aside.
  • In another large bowl, beat milk egg and egg white, pumpkin puree, applesauce, olive oil, and butter. Add the mixture of dry ingredients, stir well. Fold in pecans.
  • Bake ladlefuls of batter on the waffle iron until crisp and golden brown. Serve hot.
