Candied Sweet Potatoes

INGREDIENTS
Servings: 8
Sweet potatoes 
3 lb, peeled, sliced into 1/2-inch rounds
Brown sugar 
1/2 cup
Bourbon 
2 tbsp
Nutmeg 
1 pinch
Salt 
1 pinch
Orange juice 
1/2 cup
Butter 
3 tbsp
Cinnamon 
1 stick
DIRECTIONS
  1. Preheat the oven to 400° F (200° C/Gas mark 6). Prepare a medium baking dish by buttering it. 
  2. Combine brown sugar, juice, butter, cinnamon, bourbon, salt, and nutmeg in a medium saucepan over medium heat. Stir. Bring to a boil. Reduce heat, and simmer for 10 minutes, until thickened. Discard cinnamon stick. 
  3. Layer the sweet potatoes in the baking dish. Pour the brown sugar mixture over the sweet potatoes.
  4. Cover the dish with aluminum foil. Bake in the preheated oven for 30 minutes.
  5. Remove the foil. Bake Candied Yams for 1 hour, basting with sauce every 15 minutes. Serve and enjoy!
