INGREDIENTS

Carrots
1 3/4 lbs, peeled and chopped
Vanilla extract
1 1/2 tsps
All-purpose flour
2 tbsps
White sugar
1 cup
Baking powder
1 1/2 tsps
Eggs
3, beaten
Margarine
1/2 cup, softened
DIRECTIONS
- Preheat oven to 350° F (175° C).
- Pour water in a large pot. Bring to a boil. Add carrots and cook until tender. Drain. Transfer them to a mixing bowl.
- Using an electric mixer, beat carrots with sugar, baking powder, and vanilla until smooth. Add eggs, all-purpose flour, and margarine. Mix well. Transfer the mixture to a baking dish.
- Bake for 1 hour (until the top is golden brown). Enjoy your Healthy Carrot Souffle!
