Cauliflower in a decadent sauce will have everyone scraping their plates!
INGREDIENTS

Cauliflower head
1
Butter
2 tbsp, plus more for pan
Garlic
2 cloves, minced
Parmesan cheese
1/2 cup, grated
Thyme
1 tsp, chopped
Kosher salt
to taste
Ground black pepper
to taste
All-purpose flour
2 tbsp
Whole milk
1 1/2 cup
Gruyère cheese
2 cups, shredded, divided
Ice water
DIRECTIONS
- Preheat the oven to 375° F (190° C). Prepare a casserole dish by buttering it. Line a baking sheet with paper towels.
- Cook cauliflower for 3 minutes in a pot of boiling salted water. Transfer the cauliflower to a bowl of ice water. Drain. Place the cauliflower on the baking sheet.
- Melt butter in a skillet. Add minced garlic. Cook over medium heat for 1 minute, or until fragrant. Add all-purpose flour. Cook for 1 minute. Gradually add milk. Stirring, let it come to a simmer. Cook for 1 minute, until thickened.
- Remove from heat. Add cheeses and thyme. Stir until the cheese has melted. Season with salt and ground black pepper to taste.
- Place half the cauliflower in the casserole dish. Pour in half of the cheese mixture. Repeat with the remaining cauliflower and cheese mixture. Top with 1 cup of Gruyère cheese.
- Bake in the preheated oven for 25 minutes, until golden on top. Enjoy your Cauliflower Au Gratin!
