Cauliflower Au Gratin

INGREDIENTS
Servings: 6
Cauliflower head
1
Butter 
2 tbsp, plus more for pan
Garlic 
2 cloves, minced
Parmesan cheese
1/2 cup, grated
Thyme 
1 tsp, chopped
Kosher salt 
to taste
Ground black pepper 
to taste
All-purpose flour 
2 tbsp
Whole milk 
1 1/2 cup
Gruyère cheese 
2 cups, shredded, divided 
Ice water 
DIRECTIONS
  1. Preheat the oven to 375° F (190° C). Prepare a casserole dish by buttering it. Line a baking sheet with paper towels. 
  2. Cook cauliflower for 3 minutes in a pot of boiling salted water. Transfer the cauliflower to a bowl of ice water. Drain. Place the cauliflower on the baking sheet. 
  3. Melt butter in a skillet. Add minced garlic. Cook over medium heat for 1 minute, or until fragrant. Add all-purpose flour. Cook for 1 minute. Gradually add milk. Stirring, let it come to a simmer. Cook for 1 minute, until thickened. 
  4. Remove from heat. Add cheeses and thyme. Stir until the cheese has melted. Season with salt and ground black pepper to taste. 
  5. Place half the cauliflower in the casserole dish. Pour in half of the cheese mixture. Repeat with the remaining cauliflower and cheese mixture. Top with 1 cup of Gruyère cheese. 
  6. Bake in the preheated oven for 25 minutes, until golden on top. Enjoy your Cauliflower Au Gratin!
