This easy soup is super delicious even if you don't use cream.
INGREDIENTS

Extra-virgin olive oil
1 tbsp
Yellow onion
1, chopped
Garlic
1 clove, minced
Cauliflower
1 head, cut into florets
Vegetable stock
6 cups
Thyme
3 sprigs
Bay leaf
1
Salt
to taste
Ground black pepper
to taste
Heavy cream
1/4 cup (optional)
DIRECTIONS
- Heat olive oil in a pot. Cook onion for 5 minutes, or until soft. Add garlic. Cook for 1 minute, or until fragrant.
- Then, add cauliflower florets. Add vegetable stock, thyme, bay leaf. Bring the soup to a simmer. Cook for 15 minutes, or until tender.
- Next, remove thyme and bay leaf. Use an immersion blender to blend until smooth. Add heavy cream. Stir. Serve and enjoy your Cauliflower Soup!
