Cauliflower Recipes: Yummy Soup

This easy soup is super delicious even if you don't use cream.

INGREDIENTS
Servings: 4
Extra-virgin olive oil 
1 tbsp
Yellow onion
1, chopped
Garlic
1 clove, minced
Cauliflower
1 head, cut into florets 
Vegetable stock 
6 cups
Thyme 
3 sprigs 
Bay leaf 
1
Salt 
to taste
Ground black pepper 
to taste
Heavy cream 
1/4 cup (optional)
DIRECTIONS
  1. Heat olive oil in a pot. Cook onion for 5 minutes, or until soft. Add garlic. Cook for 1 minute, or until fragrant. 
  2. Then, add cauliflower florets. Add vegetable stock, thyme, bay leaf. Bring the soup to a simmer. Cook for 15 minutes, or until tender. 
  3. Next, remove thyme and bay leaf. Use an immersion blender to blend until smooth. Add heavy cream. Stir. Serve and enjoy your Cauliflower Soup!
